LATKES (Potato Pancakes)

Recipe taken from The International Table: Recipes from the Seattle Sister Cities
Grandmother Neomi made these patties for her grandchildren every time they visited her. The delicious patties would be ready in a few minutes and were enjoyed with hard-boiled eggs and a fresh vegetable salad. Grandma Neomi won the competition organized by the Israeli national Maariv newspaper in the 1960’s with this recipe. Serves 9–12.

INGREDIENTS
2 medium potatoes, boiled
1 large onion, finely chopped
2 eggs
1 cup chopped parsley
salt and ground black pepper,
to taste
oil for frying (sunflower, safflower,
or olive oil)
1/2 cup sour cream
1 Tbsp fresh dill, chopped
DIRECTIONS
Peel the potatoes and mash well in a bowl, then add the chopped onion, eggs, and parsley, and mix well. Season to taste. With your hands, form patties about 2" in diameter and about ½" thick.
Heat the oil in a frying pan. Fry the patties, turning when one side becomes a bit golden. Cool the patties on absorbent paper.
Combine sour cream and dill in a small dish. Serve as a topping or dipping sauce alongside the latkes. Enjoy!
