Immunity Boosting Chicken Stock

Yields: Approximately 10 cups




Ingredients:

  • 1 whole roasted chicken

  • 3 celery stalks, roughly chopped

  • 2 onions, roughly chopped

  • 2 large carrots, roughly chopped

  • 3 cloves of garlic

  • 1 Bouquet Garni (traditionally includes fresh Italian parsley, bay leaves, and sage, but you can add other herbs if you'd like)

  • Water




Instructions:

  1. Separate the chicken meat from the bones and carcass. Save the meat and skin and set aside for later use.

  2. Get a large pot and add chicken bones and carcass.

  3. Roughly chop onions, celery, and carrots to about 1" cubes and add to the pot along with whole garlic cloves and Bouquet Garni.

  4. Add enough water to the pot to cover all the ingredients.

  5. Bring the entire pot to a boil. Once boiling, reduce to a simmer and let cook for 4-6 hours.

  6. Continue to add water to the pot if the water level decreases.

  7. When you are ready to remove pot from heat, skim the top with a slotted spoon to remove any impurities.

  8. Pour contents through a strainer to remove all bones and vegetable chunks.

  9. Stock can be used immediately or can be cooled and placed in the refrigerator for later use.
