Healthy and Hearty Pho

Yields: 8 servings

Ingredients:
2 medium onions, peeled and quartered
4 ounces of fresh ginger, peeled
2 tablespoons of soy sauce
8 cloves of garlic, whole
Salt & pepper to taste
1 cinnamon stick
2 bay leaves
2 star anise
1 teaspoon of whole peppercorns
6 cups of broth (Vegetable, Chicken, or Beef)
1 pound of cooked chicken, shredded (can substitute with beef or shrimp)
4 green onions, sliced
1/3 cup of cilantro
1/3 cups of beansprouts (optional)
4 jalapenos, seeded and thinly sliced
2 limes, sliced into wedges
2 pounds of banh pho noodles (also know as rice sticks)

Instructions:
Place broth, onions, ginger, garlic cloves, salt and pepper, soy sauce, cinnamon stick, bay leaves, star anise, and whole peppercorn in a large pot; bring to a boil. Reduce heat, cover, and simmer for about 30 minutes or until flavors combine. Remove solids with a slotted spoon and keep broth hot.
Slice green onions, jalapenos, lime, and cilantro. Set aside with washed bean sprouts and shredded roasted chicken.
Fill a second pot with water and bring to a boil.
Place noodles in the boiling water pot, turn off the burner, take the pot off the burner, and let is sit for 8 minutes or until noodles are softened. Drain and rinse thoroughly. Divide noodles among 8 serving bowls.
Ladle in hot broth.
Garnish with shredded chicken, sliced jalapenos, cilantro, bean sprouts, green onion, and lime.
