Chicken Waldorf Salad

Ingredients
1 cup of mayonnaise (or Greek yogurt or sour cream)
1/4 cup coconut oil - melted
2 tbsp white wine vinegar
2 tbsp lemon juice
Zest of 1 lemon
1/4 tsp black pepper
2 tbsp honey
1 1/2 cups arugula (or 2 heaping handfuls)
1 lb cooked chicken breast
1 cup honey roasted walnuts
2 to 3 ribs or celery, chopped
1 cup grapes, quartered
1 whole apple, diced into small cubed
Instructions
Combine mayonnaise, lemon juice, pepper, white wine vinegar, honey, and coconut oil in a large bowl. Whisk until the ingredients are well combined.
Add apple, celery, honey roasted walnuts, grapes, chicken, and lemon zest to the bowl. Toss until ingredients are evenly coated with salad dressing
Add arugula to the bowl and toss until evenly incorporated into the mixture.
Plate and enjoy!
