Cauliflower Pizza Crust

INGREDIENTS:

  • 5-6 cups of frozen store-bought riced cauliflower

  • 1 egg, whipped

  • Dried oregano

  • Dried Basil

  • Italian Seasoning

  • 1/8 tsp salt

  • 1/4 tsp ground black pepper

  • Quick Tomato Sauce

  • 1/2 cup of mozzarella cheese, grated or shredded

  • 1/2 cup of parmesan cheese, grated or shredded

  • Sliced Pepperoni

  • Avocado oil cooking spray (or any cooking spray of your choice)



INSTRUCTIONS

  1. Preheat oven to 375° F and line baking sheet with unbleached parchment paper.

  2. Evenly spread the frozen cauliflower rice on a the prepared parchment paper and bake for 10 minutes.

  3. Remove cooked cauliflower rice from the oven and let it cool. Transfer to a bowl lined with a clean cheesecloth (or any clean kitchen towel you have at home).

  4. Wrap and squeeze as much liquid as you can out of the cauliflower. Be patient and do this a few times until barely any liquid comes out.

  5. Increase oven temperature to 450° F.

  6. Whisk the egg with the dried basil, oregano, Italian seasoning, salt, and pepper for 10 seconds. Add squeezed cauliflower and 1/8 cup of mozzarella cheese; mix well until combined.

  7. Line the same baking pan with new parchment paper.

  8. Grate an even and thin layer of parmesan cheese on the parchment paper where you will place the cauliflower pizza dough.

  9. Place the cauliflower pizza dough over the layer of grated parmesan cheese and flatten with your hands until a thin pizza crust forms. (about 1/4"-1/2" thick, depending on your preference).

  10. Bake in the oven at 450° F for 20 minutes. Remove the baking pan from the oven and carefully flip the cauliflower pizza dough with a spatula. Place in the oven and bake for a few more minutes.

  11. Prepare a new baking pan and line with parchment paper and spray with avocado oil. Transfer the pizza crust and place over the oil on the newly prepared parchment paper. Sprinkle a small amount of mozzarella cheese over the pizza crust.

  12. Top cauliflower pizza base and cheese with our blended Quick Tomato Sauce spread with a spoon until it is completely covered up to about 1/4" from the edge.

  13. Spread an even layer of shredded mozzarella cheese. Then add slices of pepperoni, or your toppings of choice. Top off with fresh grated parmesan.

  14. Bake at 450° F for 8 minutes and check to see how everything is melting. When the cheese has melted and the tomato sauce has started to slightly bubble, remove from the oven. **NOTE: set timer for 2 minutes and check the pizza every 2 minutes after your initial 8 minutes.**

  15. Let it rest for 5 minutes, slice and enjoy.

Notes: You could cook cauliflower rice in a microwave adjusting time according to your microwave's abilities (they all differ).
