Broccoli Salad

Ingredients

Salad


  • 3 heads of broccoli, roughly chopped into bite-sized pieces (approximately 3-4 cups)

  • 1 cup shredded sharp cheddar cheese

  • 2/3 cup dried cranberries

  • 1/2 cup cooked crumbled bacon (approximately 8 cooked pieces)

  • 1/2 cup salted sunflower seeds

  • 1/3 cup diced red onions



Dressing

  • 3/4 cup mayonnaise

  • 1/4 cup plain Greek yogurt

  • 1/2 tablespoon white wine vinegar (or apple cider vinegar)

  • 1 tablespoon honey

  • 1/4 teaspoon salt

  • 1/4 teaspoon ground black pepper





Instructions

  1. Cut off the broccoli stems and roughly chop 3 heads of broccoli into bite-sized pieces. Place the broccoli in a large bowl and set aside.

  2. To make the dressing add mayonnaise, Greek yogurt, salt, pepper, white wine vinegar, and honey to a small bowl. Stir well and set aside.

  3. Add sunflower seeds, bacon, dried cranberries, red onion, and cheddar cheese to prepared broccoli. Toss until the ingredients are well incorporated.

  4. Add dressing to the salad. Mix until salad ingredients are evenly coated.

  5. Cover the bowl with wrap and let it sit in the refrigerator for at least 1 hour. 2-3 hours is recommended.

  6. Remove from the refrigerator, serve cold, and enjoy!
